So far in my limited experience with bikes (I'm on my 2nd), the Tamiya kits are relatively easyish kits to assemble, compared to the Revell/Hasegawa/Zvezda/Italeri aircraft kits that I've assembled.
Saying that, my first bike the Yamaha YZF-R1 was less complicated that the Ducati 1199 I'm building at present.
I suppose it just goes down to your preference, I've also got a Yamaha YZM-M1 "Estoril Edition", and a Honda RC213V "Repsol" just waiting to be done.
One thing I suggest even if you don't go down the route of the full PE kit, do go and buy the aftermarket front fork kits. They are well worth it.
On the bench/cupboard are a Yamaha YZR-M1 Estoril, Honda RC213V Repsol, Revell Ferrari 458 Italia, Aoshima Lambo Aventador Roadster, Revell VW Golf....... The list goes on

I last built bikes about 30yrs ago they were the last models I built until taking up the hobby only a month or so ago. I started on Revel which weren't that good back then and moved to Tamiya which were a massive improvement, so I'd certainly recommend Tamiya. As for what bike I'd say start with a street bike one I remember was a nice build was the Yamaha RD350 or RZ350 I had a real one at the time, or pick a bike you had or like.

I built RD350, GPz400R (I turned it into a 600 they are almost identical), YZR500 (Kenny Roberts), RGB500 (Barry Sheen), NSR500 all were nice to build but the racers were harder. You can now add loads of PE and up grades which I never did, I'll have to have a rummage in the loft as I'm certain I've still got them.

I ll go in the same direction. TAMIYA the best brand ever even if not cheap. AOSHIMA proposes lots of "civil" bikes, but not that easy to build.

Revell proposes some 1/9th kits but theya re old PROTAR ones and not as good as the tamiya one even if quite well thought.

Have fun and good hunting
